Cheese and Bacon Waffle Recipe

Servings

Makes 3 waffles.

Description

From The New Book of Waffles and Pizzelles, by Donna Rathmell German:

This waffle recipe is a true winner. For added bacon flavor, cut a slice of uncooked bacon into two or three pieces and place on top of the batter prior to heating. Heat a minute or two longer than normal, allowing the bacon to cook. You'll be coming back for more of these.

Ingredients

  • 1 egg, room temperature and separated
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon brown sugar
  • 3/4 cup milk
  • 1/4 cup butter, melted and cooled
  • 1/2 cup cooked, crumbled bacon
  • 1/2 cup grated cheddar cheese

Minimum-required Tools

  • waffle maker
  • measuring cup and spoons
  • whisk or hand mixer
  • small sauce pan
  • 2 small mixing bowls
  • medium mixing bowl and spoon

Directions

Preheat the waffle maker.

Beat egg white in a small bowl until stiff; set aside.

Mix together dry ingredients and set aside.

Combine egg yolk, milk, and butter. Add to dry ingredients, mixing until just blended.

Add bacon and cheddar cheese; fold in with beaten egg white until just mixed. Do not over beat batter.

Pour about a third of the batter onto your heated waffle maker. Close lid and bake according to your waffle maker's instructions. Remove when your waffle maker indicates the waffle is done (a light, a tone, or both) or when the waffle maker stops steaming.
